Veggie soup, one of my favorite comfort soups! My tummy just feels so happy when there is something warm in my belly :)
The best part about this soup is that it is packed with TONS of veggies!!! Celery, carrots, green beans, corn, broccoli, and even potatoes! (Are potatoes considered to be a veggie?) I even threw in an onion for flavor!
My favorite part about making this soup is that it is so easy and completely no fuss!
Today, my boyfriend asked me how I made the soup because he wanted to make it for dinner tomorrow. I told him to just throw everything all together and walk away!
Less than 40 minutes, deeeeeelicious soup!

What are some of your favorite soups?
1 onion, diced
green beans, cut into 1-inch pieces
medium red potatoes, cubed
1 cup of frozen corn
4 cups of low-sodium organic chicken broth
1 cup of low-sodium organic vegetable broth (optional)
1 can (28 oz.) diced tomatoes with the juice
seasonings: salt, pepper, oregano, dried basil
1) Heat oil in a pot over medium heat. Add onions, cook until translucent. Add celery, and carrot, cook for about 3 minutes stirring occasionally.
2) Pour in the canned tomatoes and add in the potatoes. Add the broths and bring to a simmer. Now is the time to season your soup! Season to taste!
3) Add the corn, green beans, and broccoli. Bring to a boil. Cook until the vegetables are tender and potatoes are soft enough.
