this + that :: it’s finally starting to feel like Fall

It’s so hard to believe that we’re already in October. It just feels like time has been going by so fast!

I hope you’re having a wonderful weekend! Are you ready for the new week to start? I’m a little excited/bummed that the weekend was so short! I survived my first week of work and an 8-5 schedule  Now that I’m working, I wake up shouting “TGIFriday!!” on Friday mornings and try to be as productive as I can be on the weekends. So far, productive is defined as stay in bed all day and catch up on all my favorites shows on Hulu :)

National Taco Day

I hop onto Facebook and I find out it’s National Taco Day and tacos are like only one of my favorite foods ever! Good thing I had tacos today!

At work there is a taco truck that comes by everyday at 10:30am. For the last few days, I’ve seen lots of people rush out to wait in line for the taco man, and yesterday I missed him! But today, I officially introduced myself to him! Mr. Taco Man himself personally came up to me to ask me what I wanted to order, but only because the two ladies working inside the food truck didn’t understand what I was saying and I had to have co-worker order for me…. Hmmm ULTIMATE food truck fail LOL!

Anyhoo, his tacos are delicious and definitely hit the spot and it’s also a great little pick-me-up treat at work. I ordered the carne asada taco and tacos de papa (potato taco). Carne asada, good! It was my first time trying a tacos de papa and it’s interesting! I’m sure there are variations on how they’re made, but my taco tasted like a deep-fried hash brown taco.

I think I’m falling in love with my Mr. Taco Man! He also serves hot dogs!!! :)

I hope you guys are having a wonderful week! First week of work is almost done and so far I’m enjoying it.

she cooks, he eats special: we made a video!

Heheh, not that type of you-know-what video! :)

In an attempt to be more hip with all the computer savvy techies out there, I made a video on an updated favorite of mine… nothing fancy schmancy! But please, don’t laugh…it’s my first attempt! Hopefully with time and more practice, I’ll get the hang of it!

Get ready for another he cooks, she eats special! Yep, that’s right! He cooks, while she eats and eats till she gets a belly ache and wants to do nothing but nap hehe.

Can you guess what he made me????! His tacos, my favorite!! This time around he fried them, which of course, upped the level of yumminess!

filling for the taco... just ground beef, onions (I chopped the onion all by myself :), garlic, and lots of seasonings

taco frying... it's a short waiting game well worth the wait :)

don't forget to drain that excess oil!

also line a plate with paper towels to soak up any extra oil

serve with some lemon wedges and salsa

all done and ready for my after meal nap :)

For a true authentic taste, try making salsa from scratch (this is also one of his original recipes :) We opted for store-bought salsa for our quickie taco fix!

I tried and tried, but I just could not upload it onto YouTube! It’s still stuck on processing! As for uploading it onto WordPress…can’t figure it out! Sigh… anyhoo, as with my amazing awesome photo taking skills (haha really?, jk!) my video is anything but extraordinary. As much as I hate to admit it, my boyfriend’s right I do not have a steady hand (no matter how much I claim I do :)

The farmers market!

I love running into them unexpectedly. Every time I’m in one, all I think about is all the amazing yummy things I can cook with all the fresh organic veggies and eating kettle corn! I’m sure by now my boyfriend is use to hearing me go on and on about it lol.

Couldn’t find the kettle corn but we did find the taco stand!! Yummmm :)
