I have a whole Pinterest board dedicated to pizzas. I use this board as an inspiration for future possible toppings for my pizzas lol. The idea for this pizza actually came from the genius behind TasteFood blog. I have been following her blog for quite a bit now, and I pretty much love everything she makes!

When I first spotted her pizza that had sweet peppers, salami, and basil, I knew I had to make it! I took the semi-homemade route and just made a quickie run to my local Trader Joe’s to pick up all the ingredients :).

PS, That’s our new basil plant! We go through them pretty quickly because we’re plant killers and in this extreme summer heat, it’s difficult keeping these beautiful plants alive! Do you have any suggestions or tips on growing basil?

My favorite new pizza dough!

I was so happy when I found the super sweet baby bell peppers! Just look at the colors! So happy and bright, perfect for a summer pizza!

And because I love garlic so much, I minced up a couple (couple, ie. 5 :) of cloves of garlic for the pizza.

My favorite part about making pizza at home is the assembling process!

Bake and eat!!

I have the worse willpower when it comes to letting food cool…if it weren’t for my boyfriend, I would of eaten that thing straight out of the oven!

Sweet Pepper, Salami, and Basil Pizza (inspired by TasteFood)

  • 1 pizza dough
  • couple spoonfuls of pizza sauce
  • couple cloves of garlic, minced
  • salami
  • sweet baby bell peppers, thinly sliced
  • handful of basil leaves, chiffonade (extra for garnish)
  • olive oil
  • crushed red pepper flakes
  • fresh crack pepper

Directions:

  1. Preheat oven to 500°F.
  2. Grease baking sheet with olive oil. Stretch out pizza dough onto the baking sheet and brush on more olive oil.
  3. Spread a couple spoonfuls of pizza sauce over the dough making sure it’s just a thin layer, and disburse the minced garlic.
  4. Assemble pizza. Arrange salami, sweet peppers, and basil. Sprinkle cheese on top.
  5. Bake until crust is golden and cheese has melted, 12-15 minutes.
  6. Serve and eat immediately!

Cherry Tomato Pizza

Now that we’re officially experiencing the warm mid-Spring weather, I think a fresh, light, and healthy….err- healthier (ahem, gotta prep for pre-bikini season! :) lunch is in order!

Since it is Spring and there’s tons of fresh produce available at the grocery store, I wanted to make a pizza that wouldn’t put me in a food induced coma. Soooo, produce of choice: bright red cherry tomatoes!

What are your favorite toppings for a Spring themed pizza?

Cherry Tomato Pizza

(serves two)

  • one package of rosemary focaccia pizza dough
  • 4-5 spoonfuls of pasta sauce (optional)
  • cherry tomatoes, sliced thinly
  • mozzarella cheese, shredded
  • parmesan-reggiano, grated
  • red pepper flakes, light sprinkle
  • pink himalayan salt (or sea salt)
  • pepper

Directions:

  1. Preheat oven to 400°F. Spray a pan with olive oil. Work dough onto the pan. Lightly coat both sides of the dough with olive oil. Using a fork, prick holes all over the dough. Season with salt. Bake in the oven for 7 minutes.
  2. Once out of the oven, coat the pizza with a few spoonfuls of pasta sauce. Spread a layer of mozzarella cheese. Place sliced cherry tomatoes all over the pizza. Add more mozzarella cheese and grate some parmesan-reggiano. Sprinkle red pepper flakes all over and season with fresh ground black pepper.
  3. Bake in the oven for 20 minutes or until cheese is melted and crust is golden.

Hope the case of Mondays didn’t get to you! Here’s a super yummy quickie dinner idea for those of you who are currently pizza, which just so happens to be all the time for me! I was actually inspired by the new Papa John’s 5-Sausage Pizza because it had chorizo, but I think my version is way better (not biased at alllll here, smh hehe) and way more healthier! We made this for date night and it was so easy and effortless!

Pineapple + chorizo, amazing on its own but together…mmmm mmm mmmm :)

QUICKIE FIX: Italian Meats with Basil Garlic Naan Pizza

I made this for lunch! My boyfriend had a huge craving for pizza, and being an awesome girlfriend (hehe, I kid… ahem I think this is your queue boyfriend :), I made him pizza! It took absolutely zero prep work and only 8 minutes in the oven. It’s a healthier version of one my boyfriend’s  favorite foods. Using fresher and better ingredients, I was able to come up with a delicious resolution-approved lunch for two.

Prepare for yummy goodness…

INGREDIENTS: naan bread, pasta sauce, assorted italian meats, cheeses, fresh basil

Spritz the naan with some olive oil and broil in the oven for a few minutes, just until it’s slightly crisp (about 4 minutes) or feel free to skip this step!

KITCHEN TIP: No olive oil spritzer? Pour a few drops of olive oil on the bread and rub, spreading the olive oil evenly.

When done broiling, slaughter on your favorite pasta sauce (I opted for chunky vegetable) and layer with your favorite Italian meats and cheeses. Then season with some freshly ground black pepper and dried oregano.

For my pizza, I recommend not baking with the fresh basil leaves on top because they will wilt and dry up in the oven. For my boyfriend’s, he loaded that baby up with tons of meat and two types of cheeses…a very manly man pizza :)

make-your-own-pizza anniversary special

Remember when my boyfriend texted me a pic of pizza dough and how excited I was for a make-your-own-pizza date night??

Well, it finally happened this week! For our twenty-something-odd month anniversary, he wanted us to make something together so he suggested pizza. You bet I was excited when he mentioned that! :)

For our make-your-own-pizza, there were only 2 requirements….he had to have meat, and I had to have some sort of veggie.

gentleman's choice: pepperoni and Calabrese-style salami

lady's choice: broccoli, white button mushrooms, grape tomatoes (I apologize for the word "ass" on the can. that is my boyfriend's can of whoop ass...when I beat him at sudoku, I make him open my cans because every time we go shopping we always forget to buy a can opener haha)

Making your own pizzas is great because you can use up ingredients that have been hogging up precious fridge space…

cheese: havarti, muenster, parmesan (who knew there were so many different types of cheese just lying in the fridge?) PS. In no way am I a cheese connoisseur, so this may be a strange combo for some, but melted cheese mixed in with yummy tomato sauce all taste the same to me :)

Since I made whole wheat spaghetti caprese and Marcella Hazan’s Tomato and Butter Sauce with Onions in the past  and discovered how amazingly simple and easy making your own sauce was, I vowed to never buy any kind of red sauce from the grocery store again! I guess that vow included pizza sauce too (non-recipe recipe below…sorry, I never measure! But I have guesstimates :)

While the sauce simmered, I chopped up all of the ingredients (even the onion! :) and tried my best at plating like my idol (I love how freakishly neat she is).

I must admit, I munched on a few slices of pepperoni and salami (very yummy!)

The pizza was assembled in this fashion… slices of muenster/havarti cheese, top with sauce, sprinkled parmesan cheese, place toppings. To bake the pizza, we used our Williams-Sonoma cake pan which turned out pretty good.

Although it turned out great and was yummy, I wasn’t extremely satisfied with the crust… Any tips for me when it comes to baking pizza crust in the oven?? I like my crust crunchy! Would it be okay to pre-bake my crust for a few minutes before I add all the toppings? If so, how long? Sigh… I need help!! :(

What do you guys like to do for anniversaries? Do you prefer to stay in? Or get all gussied up and head out? If so, do you go back to where you had your first date? I would love to go to Gordon Ramsey’s Boxwood Cafe at The London West Hollywood for a fancy daytime brunch (we both love Ramsey!). And one place that always brings back happy/funny/awkward memories is Viva Madrid, it’s where we had our first date :)

Kat’s Pizza Sauce

serving size: 1 medium pizza

  • 16 oz. can organic tomato sauce
  • 4 garlic cloves, minced
  • 5-7 fresh basil leaves, chiffonade
  • 2 tbsp dried organic 0regano (more or less depending on taste)
  • sea salt (to taste)
  • fresh ground pepper (lots of it)
Directions:
  1. Combine all the ingredients into a saucepan.
  2. Bring it to a boil, then reduce the heat to a simmer.
  3. Simmer for 20 minutes, or until it’s no longer watery in consistency.
  4. Let it cool for a few minutes, then spoon sauce onto pizza dough.

Look at what my boyfriend texted me a pic of at Fresh And Easy today…..premade pizza dough! I usually see premade pizza crusts for sale but the actual dough! I am so excited for make-your-own-pizza date night! :)

Any toppings suggestions? I love veggies! What kind of seasonal veggies would be great for a pizza?
