chicken enchilada nachos
The inspiration for these nachos actually came from Yard House. I would have to say that Yard House and Chili’s (endless chips and salsa + margs! = the best!) are two of my favorite places for happy hour! My favorite shareable munchies from Yard House are their chicken nachos. If anyone knows the recipe for their chicken nachos, please please please let me know!
I tried re-creating it but it kind of just became my own strange concoction… This is so simple and a great last-minute make for emergencies!

layered baked Louisiana style chicken nachos
Remember National Nachos Day? Remember those drool-worthy pics of nachos I put up? Remember me telling everyone and anyone that would listen about how much I wanted nachos thereafter?
Well, those layered baked buffalo chicken nachos were on my mind all weekend long and for the most part of the week! I finally had the chance to “assemble” them during the week, and it was incredibly yummy! It was very simple, extremely quick, and a boyfriend-approved dish! :)
Check out my instructables on how to assemble your very own casserole sized dish of buffalo chicken nachos!

INGREDIENTS: tortilla chips, Louisiana style hot sauce, chicken, scallions, cheese, avocado

Oh dear, how many foodie dedicated days have we had this week? Thursday was sandwich day and Friday was candy day, annd today…well, today is National Nachos Day!
I didn’t think nachos would get to have its own day, but then again that’s what I said about sandwiches…le sigh, fool me once shame on you, fool me twice shame on me :(
To me, nachos are a dangerous happy hour food. They are insanely delicious to munch on but I always end up eating a lot more than I want to… I mean, c’mon! Who doesn’t love the combination of chips+cheese+meats+alcohol??? It’s so hard to have self-restraint! :)
For a laugh, head over to foodbeast for an odd compilation of nachos!
To celebrate yet another foodie day, here are some yummy ideas for National Nachos Day…

Will you be observing this foodie holiday with a big plate of nachos? I don’t know if my tummy can handle all the delicious foodie holidays from earlier this week, so I’ll be observing National Nachos Day on another day. Hopefully, it doesn’t conflict with another foodie holiday :)
