I know, I know, I know…. I’m back yada yada yada. And yes, I have been missing in action for quite some bit now but I AM BACK!! And why not make my comeback with the infamous engagement chicken from Glamour magazine!
This was my very first chicken roast, and it will definitely be something I plan on doing again but using different flavors and spices :)
Now, back to this chicken! Apparently, this is the chicken Howard Stern’s girlfriend (at the time) made for dinner one night and I guess the story is that days later he popped the question! But that’s not the true origin of the engagement chicken.
This chicken has been around for years, like yeeeeears!! This recipe was passed down to one of the assistants from one of the Glamour fashion editors. She made the chicken for her boyfriend, who a month later asked her to marry him. How romantic! And uhhh weird that a chicken led to marriage? :/
Of course, I am a true sucker for cheeseball stories, so I gave it try! I dub this my “ulterior motive” chicken :)
The recipe itself is very basic and easy, all you really need are lemons!

But I added in some veggies and potatoes for a more heartier meal. And to make things even easier, I went with the pre-chopped asparagus medley from Trader Joe’s! All I had to do was chop a potato into bite-sized cubes and season everything with some olive oil, salt, and pepper.

After that was done, it was on to the fun part! Washing and cleaning the chicken! PS, thank you Trader Joe’s for pre-cleaning the inside and taking out all of the inners and packaging them ever so neatly :)

The inspiration for these nachos actually came from Yard House. I would have to say that Yard House and Chili’s (endless chips and salsa + margs! = the best!) are two of my favorite places for happy hour! My favorite shareable munchies from Yard House are their chicken nachos. If anyone knows the recipe for their chicken nachos, please please please let me know!
I tried re-creating it but it kind of just became my own strange concoction… This is so simple and a great last-minute make for emergencies!

My wing obsession all began when I first sunk my teeth into a plate of wings at Hooters of all places! And from that point on, it has been a long love affair of mine.

For the past few weeks, our date nights have been spent eating wings. Yes, wings of all types…baked parmesan garlic, maple garlic ginger, bbq, and my new current fave, hot + sweet srirarcha wings!
I just love the combination of hot and sweet! If you have a love affair with Sriracha sauce than these wings were made for you!
Making the marinade for the wings requires very little ingredients…just melted butter, soy sauce, maple syrup (can substitute with honey) and of course, Sriracha sauce! Make sure you taste along the way! Adjust the sauce to your tastes and tolerance for spice. If the sauce is too spicy, add in a few teaspoons of brown sugar and more maple syrup.

Trust me on this, it’s pretty good already. But if you want you can always leave the wings in the marinade for an hour or until you’re ready to bake them.
It wouldn’t be wing night without my favorite baked parmesan garlic chicken wings! To make these wings, season the wings with s+p and coat them in garlic, oregano, rosemary, cumin.
