In my perfect world, every breakfast item, dessert, treat, candy, anything (and everything!) would be covered in sprinkles!
I love to add bright sprinkles in anything that’s edibility possible, sooooo why not pancakes??

It’s such a cute way to jazz up boring pancakes! For breakfast duty, I made the pancakes and eggs and he made chilaquiles :)

- Trader Joe’s pancake mix
- giant handful of sprinkles!
Directions:
- Make pancake batter according to the directions on your pre-made mix.
- Dump a bottle of sprinkles into the pancake batter.
- Cook pancakes and eat immediately!

Remember this mystery way back when?? I called it a monster. But it’s really a German pancake (aka Dutch baby pancake, Bismarck, Dutch puff, or puff pancake…phew! so many names for a hideous being…).
My fascination with this really puffy pancake began when I first stumbled upon Emeril’s German Apple Pancake recipe online. It looked beautiful! Emeril’s description of the pancake had my mouth watering. I was sold. This was going to be my breakfast.
So the next morning, I told my boyfriend I’m making us a German pancake! But later I found out that he ate all the apples…the apples I needed for my German apple pancake. I could of sworn I remember telling him the day before not to eat the apples, but little did he remember :(
Apples or no apples, I was on a quest to make German pancakes for breakfast!
And this is how it all started…

INGREDIENTS: 4 eggs, milk, brown sugar, flour, butter, vanilla extract, granulated sugar, and cinnamon
Preheat the oven to 4oo°F, and butter up a large skillet.

Oh wait, I can!! It’s that time again! There’s a time change a coming!
The end of daylight savings doesn’t officially kick in until 2AM, but don’t forget to change those clocks an hour back before you go to bed tonight. Don’t you just hate it when you forget and you wake up the next morning an hour late or an hour earlier? I know I do because I’m always a disoriented mess in the mornings :)
This could possibly be the greatest day of the year because we actually gain an hour…and who doesn’t love that? It’s another reason to be thankful for in November.
Fun fact: Did you know that not every state observes Daylight saving time? Well, if you lived in Arizona or Hawaii then you do! Hehe.
Anyhoo, I love the end of daylight savings because it means I get an excuse to sleep in! Such a great way to start the day!
Since we all get to sleep in tomorrow, I think we also all deserve a nice late-breakfast or brunch to truly start the day on a great note!

Is this not a genius idea for when you have extra pasta noodles from the night before?
It’s just so perfect for me! I’m always craving noodles, eggs, and bacon, so why not eat it all during breakfast?! This is also great when you have more breakfast ingredients than dinner ingredients in your fridge! Oh my, I can go on and on about this! I think I should just go raid my fridge and see what I have :)

UPDATE: so I go down to the kitchen for a pantry/fridge raid and nothing! so yeah, I ate a leftover porkchop for breakfast… :)
Breakfast Pasta (recipe via spoon fork bacon)
- 1 lb linguine
- 3 tablespoons extra virgin olive oil
- ½ lb baby new potatoes, quartered
- 1 medium yellow onion, diced
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 1 tablespoons fresh thyme, minced
- 1 tablespoon unsalted butter
- 4 eggs plus 2 egg whites, lightly beaten
- 2/3 cup cheddar cheese, grated
- ½ lb bacon, cooked and crumbled
- salt and pepper to taste
Directions:
- Place a large pot, filled with water, over medium-high heat and bring to a boil.
- Once the water has come to a boil, drop the pasta in along with a small handful of salt (about 3 tablespoons).
- Cook the pasta for 7 to 9 minutes or until al dente, stirring frequently.
- Drain the pasta, toss with a small amount of oil and set aside.
- Place the olive oil in a large sauté pan and place over medium heat.
- Add the potatoes to the pan and season with salt and pepper.
- Sauté for 5 minutes and add the onion, bell peppers and thyme. Season with salt and pepper and stir.
- Sauté the mixture for 6 to 8 minutes or until the onions and peppers have softened and the potatoes become fork tender.
- Pour the mixture into a bowl and set aside.
- Place the pan back on the stove over medium heat and add the tablespoon of butter.
- Pour the beaten eggs to the pan and gently scramble for about 2 minutes.
- Add the cheese and stir. The mixture should still be a partially runny.
- Add the linguine and potato mixture to the pan and toss together until everything is fully combined and the eggs have cooked through. Season with salt and pepper.
- Sprinkle the bacon over the pasta and serve hot.

You know what’s lame? The fact that I mentioned in my previous post that I’m a just-not-into-breakfast kinda girl and guess what just so accidentally happens to be my first recipe post? Pancakes! Yes pancakes…oh the irony!
These aren’t your ordinary pancakes. These delicious goodies are swirled in cinnamon yumminess! Think of these as smushed cinnamon buns because they taste and smell just like one. This just might be my new favorite way of making pancakes!
Let’s pause and take a short break. Feel free to walk away and stretch those legs, but do please come back to read the rest of this post and to see sexy pics of pancakes! You’ve been warned. I am now going to rant about my iffy relationship with pancakes. I cannot stand eating them plain, it makes me cringe. I have to incorporate something (anything!) into them. I love putting in fresh blueberries, bananas, strawberries, chopped up apples chunks…anything that makes them taste less like dough and more like…well I don’t really know! And it’s a great way to include fruit into my diet.
Welcome back! Now on to the recipe:
FOR THE PANCAKES
- I took the “Semi-Homecooking” route and used Trader Joe’s Pancake Mix.
FOR THE CINNAMON SWIRLY FILLING
- 1/2 cup of melted butter
- 2/3 cup of brown sugar
- 1 tablespoon of ground cinnamon
- 3 tablespoons of flour
