On this beautiful morning, July 13th, she cooks, he eats is officially a year old! Coincidentally, it is also Friday the 13th…

When I started this blog, I thought it was just going to be my boyfriend and I reading it. A lot has changed since I started blogging and started opening my life up to this crazy world called the internet. But I’m glad I did it because through this blog I’ve met a lot of wonderful people with the same passions, likes, goals, even dislikes! I think the blogging community is a wonderful community to be apart of and I love being apart of it.

I started this blog as a way to document my cooking adventures because I was such a newbie in the kitchen and I just wanted to learn how to cook and not feel overwhelmed and uncomfortable. Never in my wildest dreams did I ever imagine that I would actually have a recipe published. That is still one of my greatest personal accomplishments. Thank you for joining me on my cooking adventures (and mis-adventures!) and I’m so grateful for all of your friendships, support, and advice. Thank you guys again :)

So before I turn extremely sappy, I want to share a recipe with you guys first!

As with any celebration, cupcakes are always a must! So I would like to share with you the recipe for my bday cupcakes (what is wrong with me? why didn’t I post these sooner?!)! I couldn’t decide what to bake for my birthday dessert because…well, let’s be honest…I have a very hard time making up my mind AND sticking to it too! But the obvious choice was cupcakes! And since it was also our anniversary, I wanted to do something with cookies or brownies because those or my boyfriend’s favorite desserts. Rather than baking 3 different desserts, I combined them all together and Truffle Brownie Cupcakes with Cookie Dough Frosting were born!

The inspiration for these cupcakes actually comes from Sally’s Baking Addiction. Sally doesn’t know me, but I love her. Her baking addiction has become my baking obsession and my boyfriend’s worse nightmare. She comes up with these crazy, indulgent, and beautiful desserts that just blows your mind! I’ve pinned almost everything she’s ever baked onto my Pinterest boards! Most baking blogs that I do follow and love use complicated ingredients (that I would purchase and probably only use once) and sometimes can be quite overwhelming and difficult to even attempt. But not Sally’s!! Her directions are clear and concise, and she’s not afraid of using an obscene amount of sprinkles! Le sigh, I can go on and on about Sally’s Baking Addiction but I won’t, instead I will just direct you to her blog here :)

You can obviously go the all-homemade route or you can do semi-homemade like me! Since I found a box of Trader Joe’s baking mix lying around (purchased as a back-up dessert for my chewy chocolate chip cookie bottomed cupcakes) I just used that and made the cookie dough frosting.

It’s February! Do you ever notice that from mid-September to February, it’s nothing but holidays? From mid Sept.-Oct., we have Halloween, then from Oct.-Nov. it’s Thanksgiving, then it moves on to Nov.-Dec. Christmas. and lastly mid Jan.-Feb. it’s Valentine’s Day, phew! Nothing but celebrations! I don’t mind. Who doesn’t love presents? :)

How’s your February going? Mine has been pretty busy and it’s just the third day, oh my!

1/2 BIRTHDAY

It’s my half birthday today! she cooks, he eats officially turns 6 months! How fitting that it’s on a Friday, right? Only like my favorite day of the week! But then again, you guys already know that :)

Thank you for taking the time and stopping by, reading, leaving comments, giving suggestions and notes. I read everything that’s sent my way. This blog is my heart, and I am so happy for this little foodie community of mine here. And I’m so lucky and thankful for all the wonderful friendships that I’ve formed through my blog. Anyhoo, I hope you all had a great week! I’ve been feeling a bit sick all week, but that won’t stop me from having a fun weekend! Much needed after a very strange and oddly clumsy accident prone week! I hear it’s going to be a beautiful weekend here in LA! What are your plans for the weekend?!

Beautiful new bakeware from my boyfriend!! I got everything I’ve been missing in my life…a wire rack, quarter sized baking sheet, large baking sheet with a lid!! I still cannot contain my excitement, and I’m already looking forward to baking tons of new and old dishes! Oh, did I mention that it’s Nordic Ware?! I hear it’s a good brand. Please tell me it’s a good brand! I’d hate to have my boyfriend purchase it because I told him I saw “many stars on Amazon” and “that brand is sold at Williams-Sonoma, and if it’s good enough for Williams-Sonoma then it’s good enough for me”…yes, those were my words exactly. But then again, he claims to “know metal” (err, know metal hehe), sooo I can’t wait to test it out! :)

All I can say is that it was hard putting together this week’s Friday Favorites because the start of the new year has been so good to me. Sigh, I would love to share every fun adventure and special moment with you but I don’t want to bore you :)

I hope you all had a great week! Did any of you guys make resolutions for the new year? I’d like to say that I’m already crossing things off my list! I think the key to accomplishing resolutions is to always keep them in mind since we’re always on the go and it’s so easy to forget come mid-Feb. These are some of my tips on making resolutions last:

  • “Out of sight, out of mind” right…Who says that has to be true? Always keep a list of your resolutions with you. I like to keep a list on my phone using this note-taking app (it’s my favorite at the moment and reminiscent of my trusty old post-its)
  • Also I chose to “sticky” my resolutions post on my blog, so feel free to remind me and check out my progress because I will be checking things off! Hopefully, that provides motivation for you and me :)
  • Be sure to keep yourself in check. Take the time at the end of each month to go over your resolutions. If you’re not crossing things off, then how will you ever accomplish those goals? It’s another constant reminder and motivater.
  • Most importantly, make sure your goals are within reach! And always stay positive!

From the bottom of my heart, I hope the start of your 2012 has been filled with many laughs, hugs, and tons of giggles!

friday showers aren’t going to rain on my parade

Good morning!! Finally, rain season is upon us and it’s starting to feel a lot like the holidays. It hardly rains here in way-too-sunny LA, so I am happy!! I love getting all bundled up for the rain. What about you? Do you love rainy days too? :)

Rain days are dedicated to couch snuggles, movies, and Seinfeld, all while having the fire in the back. Ohhh yeah, I can’t wait! What are some of your favorite rainy day activities?

By the way, aren’t the days going by quicker?! The week just blew by! This week, my boyfriend did all the cooking (I cooked for date night), what a sweetheart! Check out his fried tacos from earlier in the week, it’s an updated  all-time favorite of mine that he only makes me me (that’s what I tell myself, hehe). For date night, I made Paula Deen’s infamous Lots O’Meat Lasagna. It was too000 delicious! More to come on that later, I promise :)

it’s the 100th post!! what better way to celebrate than with a Liebster Blog Award!

Ahhh finally, the 100th post! Wow, I couldn’t have gotten here without all of you! Since it is the big 100, I guess by default this post needs to be extra special right? :)

Well two Fridays ago, I mentioned that I was awarded with the Liebster Blog Award. The beautiful lady behind Around the World in Eighty Bakes nominated me for the award. What made it even more sweet was that I received the nom on National Chocolate Cupcake Day. I was on cloud nine that day, I felt like Tuesday was made for me. I was that excited…everything just fell right into place.

Sure, it probably doesn’t mean much to some but for a girl that’s only been blogging for almost 5 months now…it means the world to me.  When I started blogging I never even dreamed of things like this happening for me or my blog.

I feel like this is the only appropriate time in my life where I am allowed to give a cheesy thank you speech, so please bear with me because I’m going to me the biggest cheeseball there is right now! Hahah. It’ll only be for a second, I promise :)

To the “he” in she cooks, he eats thank you for all your encouragement and support not only with the blog but with everything that I do. I can’t imagine being with anyone else other than you, here’s to the next 100 years and the many anniversaries and date nights to come! I love you. Oh ps. thanks for the kitchen! :)

i wish time would stop just for Fridays

It’s finally starting to feel like Autumn! The mornings (yes, I am now a “I wake up at 6am morning person” person :) here are so cold and foggy, I love it because I get to wear my coziest sweater and bundle myself in my favorite oversize soft warm scarf…love! :)

This week was such a great week! So many great surprises and amazing moments happened this week. I hate to brag, but I think Tuesday was my day, but that doesn’t mean I don’t love you Friday!
