Funfetti Pancakes

In my perfect world, every breakfast item, dessert, treat, candy, anything (and everything!) would be covered in sprinkles!

I love to add bright sprinkles in anything that’s edibility possible, sooooo why not pancakes??

It’s such a cute way to jazz up boring pancakes! For breakfast duty, I made the pancakes and eggs and he made chilaquiles :)

Funfetti Pancakes

  • Trader Joe’s pancake mix
  • giant handful of sprinkles!

Directions:

  1. Make pancake batter according to the directions on your pre-made mix.
  2. Dump a bottle of sprinkles into the pancake batter.
  3. Cook pancakes and eat immediately!

Remember this mystery way back when?? I called it a monster. But it’s really a German pancake (aka Dutch baby pancake, Bismarck, Dutch puff, or puff pancake…phew! so many names for a hideous being…).

My fascination with this really puffy pancake began when I first stumbled upon Emeril’s German Apple Pancake recipe online. It looked beautiful! Emeril’s description of the pancake had my mouth watering. I was sold. This was going to be my breakfast.

So the next morning, I told my boyfriend I’m making us a German pancake! But later I found out that he ate all the apples…the apples I needed for my German apple pancake. I could of sworn I remember telling him the day before not to eat the apples, but little did he remember :(

Apples or no apples, I was on a quest to make German pancakes for breakfast!

And this is how it all started…

INGREDIENTS: 4 eggs, milk, brown sugar, flour, butter, vanilla extract, granulated sugar, and cinnamon

Preheat the oven to 4oo°F, and butter up a large skillet.

Cinnamon Swirl Pancakes

You know what’s lame? The fact that I mentioned in my previous post that I’m a just-not-into-breakfast kinda girl and guess what just so accidentally happens to be my first recipe post? Pancakes! Yes pancakes…oh the irony!

These aren’t your ordinary pancakes. These delicious goodies are swirled in cinnamon yumminess!  Think of these as smushed cinnamon buns because they taste and smell just like one. This just might be my new favorite way of making pancakes!

Let’s pause and take a short break. Feel free to walk away and stretch those legs, but do please come back to read the rest of this post and to see sexy pics of pancakes! You’ve been warned. I am now going to rant about my iffy relationship with pancakes. I cannot stand eating them plain, it makes me cringe. I have to incorporate something (anything!) into them. I love putting in fresh blueberries, bananas, strawberries, chopped up apples chunks…anything that makes them taste less like dough and more like…well I don’t really know! And it’s a great way to include fruit into my diet.

FOR THE PANCAKES

  • I took the “Semi-Homecooking” route and used Trader Joe’s Pancake Mix. 
FOR THE CINNAMON SWIRLY FILLING
  • 1/2 cup of melted butter
  • 2/3 cup of brown sugar
  • 1 tablespoon of ground cinnamon
  • 3 tablespoons of flour
