Lasagna Rolls

Ahhh another Pinterest find! I can spend hours upon hours pinning delicious discoveries, actually I do! And all these said delicious discoveries go right onto my now very organized boards. Yes, I am pretty proud of myself. How do you organize your Pinterest boards? Perhaps we can swap tips? :)

These oh-so yummy lasagna rolls came from the mastermind behind Cooking Classy. Please check her out, her recipes are so amazing! I’ve practically pinned everything she’s ever made! With that said, I am so happy I finally got the opportunity to make something from Cooking Classy. I wanted to make these lasagna rolls ever since I stumbled upon them and since it was rainy and gloomy all week in LA, I figured lasagna would be the ultimate comfort food for date night.

I was a bit worried at first because I’ve never boiled lasagna noodles and I was terrified of them falling or breaking apart during the cooking/handling process but it turned out being a lot less stressful than I thought. I think these lasagna rolls take a little bit more effort than my all-time favorite Paula Deen Lot’s O’Meat Lasagna but it’s so worth it! I did tweak the recipe around to suit our tastes, but nothing drastic…just a add more/take out kinda thing.

Let’s get started with the best part, the meat sauce!

Heat a large skillet with some olive oil, and brown some ground along with one diced onion….

Once the beef is nice and browned, add in crushed tomatoes and minced garlic (lots!!). Season with lots of s+p (heavy of the p), a smidge of crushed red pepper flakes, and tons of oregano.

I omitted the food processing part only because I love my meat sauce nice and chunky! Anyways, let the sauce simmer over low heat and be sure to taste test along the way! I caught by boyfriend helping himself to a few rounds of taste testing :)

We Are Young

Oh what a week this has been! Yesterday, my boyfriend and I were “trapped” in an elevator! I’m using the word “trapped” loosely because we were only stuck in the elevator for about a minute but when the elevator jammed and it went up and down for a little bit, I was terrified. Thank goodness he was there and we were together because he is definitely the calm one lol. Has this ever happened to you before?! I will now be taking the stairs :)

Short Ribs with Ginger Soy Marinade

While having Pinkberry, we were deciding what we should make for dinner. He mentioned that he had bought short ribs from Costco. So I quickly did a google recipe search for a marinade with a short marinating time and I stumbled upon  this. Just looking at the title of that recipe got me excited! So we did a quickie grocery run to Trader Joe’s to get our missing ingredients.

When we got home and he showed me these big chunks of beef, I was a bit flabbergasted because they were nothing like my beloved Korean bbq ribs. So cooking time is way off from the suggested cooking time from the recipe and we had to use a meat thermometer to check to see if the meat was safe for eating.

Anyways, the marinade is the best part! To make the marinade, you will need 1/3 cup of grape seed oil…(I finally got measuring cup spoons! Not the cutest, but they’ll do for now ;)

Grate lots of fresh ginger! There really is no such thing as too much ginger for this recipe. If you love the flavors of ginger then use a whole chunk like me :)

Warm the grape seed oil in a small sauce pan. Add brown sugar and stir until the sugar has softened. Don’t worry if it looks funny because the oil and the brown sugar will still be separated, it’ll all come together when you add the soy sauce.

Garlic Jasmine Rice with Pork Tonkatsu and Tonkatsu Sauce

For date night last week, I made pork tonkatsu! I’m very excited to blog about this because I did all the work myself…even THE. FRYING. PART. Simple ingredients, easy to put together…this is just such a great yummy homemade date night food :)

First, rinse the pork chops and pat dry. If the pork is moist and wet, the breading will end up being gunky and soggy.

Since our chops were on the extra thick side, I sliced them in half lengthwise and trimmed off the excess fat. Make sure it’s cut evenly throughout otherwise it won’t be cooking evenly throughout. If it does end up getting a little lopsided, feel free to pound it with a meat tenderizer.

Season both sides liberally with salt and pepper and set aside…

3 words that describe my week: karma, tummy aches, and good-byes.

After nine years, “One Tree Hill” and I said our good-byes. I’ve been watching that show for almost half my life…it sounds so strange when you think of it that way. I loved that the show came full circle and ended on a good note, a good cheesy note. Did anyone else catch the final episode?

five too many double stuffed oreos led to massive two day tummy pains for me...i can't believe it's taken me 20+ years to discover this, PB is the best! :)

i told my boyfriend i was feeling so well, and guess what my he sent me a pic of?! cooookies! he made me cookies. sooo is he a keeper ladies and gents? :)

layered baked louisiana-style chicken nachos || i noticed there was a HUGE surge in popularity for these nachos this week via Pinterest! it definitely made my week because these nachos were so good and are finally getting the attention they didn't get the first time around. please check it out if you have time :)

carmel mango chicken and garlic noodles from PF Changs || i highly reccommend the garlic noodles, sooo good! must learn to make my own version! if you have any other noodle recs from PF Changs, please let me know! i love me my noodles :)

favorite frogurt:

yeah, yeah, Pinkberry aaagain...but it's hovering between high 70s-low 80s here, life in LA is tough hehe jk :)

favorite words to live by:
