chocolate chip blondies!! moist like a brownie/soft and chewy like a cookie onomnomnom (update: ate a day 4 old blondie and still so good :)

Favorite noodles:

spicy miso ramen from RA Sushi! my boyfriend always breaks out in a little sweat, me on the other hand love the heat (i add more) lol :)

Favorite sip:

not only is Nordies one of my favorite stores to shop, they also make the best coffee! i always order the honey almond latte. if you love marzipan then i highly recommend trying this!

Chocolate Chip Blondies

My first attempt at blondies!

What are blondies? I’m not quite sure… Word on the interwebs is that they are blonde brownies sans chocolate. I don’t think these in particular taste like a brownie, but more like a cookie!! These chocolate chip blondies are very chewy, moist, and soft! What I love about these is that they are very easy to prepare (only one bowl!) and takes 20 minutes, which means straight from bowl to oven to my belly! :)

The only thing I would do differently next time is to double the recipe because they weren’t as thick as I expected (and I did use a small pan). Note: in the above and below pic, I stacked two blondies together to get the desired thickness I wanted for photo purposes but they are half the thickness in person…

Cherry Tomato Pizza

Now that we’re officially experiencing the warm mid-Spring weather, I think a fresh, light, and healthy….err- healthier (ahem, gotta prep for pre-bikini season! :) lunch is in order!

Since it is Spring and there’s tons of fresh produce available at the grocery store, I wanted to make a pizza that wouldn’t put me in a food induced coma. Soooo, produce of choice: bright red cherry tomatoes!

What are your favorite toppings for a Spring themed pizza?

Cherry Tomato Pizza

(serves two)

  • one package of rosemary focaccia pizza dough
  • 4-5 spoonfuls of pasta sauce (optional)
  • cherry tomatoes, sliced thinly
  • mozzarella cheese, shredded
  • parmesan-reggiano, grated
  • red pepper flakes, light sprinkle
  • pink himalayan salt (or sea salt)
  • pepper

Directions:

  1. Preheat oven to 400°F. Spray a pan with olive oil. Work dough onto the pan. Lightly coat both sides of the dough with olive oil. Using a fork, prick holes all over the dough. Season with salt. Bake in the oven for 7 minutes.
  2. Once out of the oven, coat the pizza with a few spoonfuls of pasta sauce. Spread a layer of mozzarella cheese. Place sliced cherry tomatoes all over the pizza. Add more mozzarella cheese and grate some parmesan-reggiano. Sprinkle red pepper flakes all over and season with fresh ground black pepper.
  3. Bake in the oven for 20 minutes or until cheese is melted and crust is golden.

Bacon Bits Quesadillas

Bacon. Bacon bits. Bacon bits infused with yummy melted cheese. Let me introduce to you the best lunch ever…the bacon bits quesadilla!

Let’s recount how this was created…

  • Date: Monday, April 17, 2012
  • Time: Noonish
  • Location: she cooks, he eats official test kitchen with live-in guinea pig (ie, boyfriend’s house :)

I was saving myself for happy hour, but was suddenly hearing my loud tummy rumblings and feeling those intense hunger pains (kinda like right now while I’m writing this post, ugh this always happens…right foodie bloggers? :).

Anyways, cook some bacon on a pan! My dad use to deep-fry bacon for me as a kid, so I like to cook mine till its extra crispy…

Crumble the cooked bacon, then put handfuls of cheese onto the tortilla and generously sprinkle with bacon bits. Cook on a hot pan until the cheese is melted.

Add some kettle chips and an extra slice of bacon, and voilà lunch is served!

PS, we made it to happy hour :)
