This is an update to an old favorite! Growing up as a child, I was deprived of such simple and delicious meals like meatloaf. It wasn’t until my late teens that I finally had my first bite of meatloaf. And yes, it was love at first bite. Mmmmmm! Okay, what’s the point of this? Errr I don’t really know… I apologize :)
Anyways! New take on old favorite! Rather than a loaf, I shaped them into balls. Hahah, balls… Pourqoui Kat? Because every time I shape it into the most beautiful loaf you’ve ever seen in your lifetime, it always turns in a mountain of meat blob out of the oven. Not too appealing and photogenic, you know what I mean? And being my paranoid self, I am convinced that it is never cooked evenly, especially the middle.

To make these meatloaf balls, feel free to use your favorite meatloaf recipe but I am a tad impartial (and always will be) to Paula Deen’s Old Fashion Meatloaf. The key to making perfect uniform balls…a cupcake pan!

This next step actually came from a friend’s wife. He’s been raving about his wife’s meatloaf on Facebook for as long as I can remember and he and his wife were kind to give me their secret ingredient…bacon! Delicious, fatty, amazing bacon! Cover each meatloaf ball with bacon. Oh, please be generous with this step. I’m only thinking of you :)

Did I mention that my favorite part of meatloaf is the ketchup+mustard+brown sugar glaze? Sure, it doesn’t sound all too appetizing but when you mix them all together you get that delicious meatloaf sauce. I love Paula’s recipe for this sauce so much that I actually doubled it!

While the meatloaf balls were baking in the oven, I washed and peeled some veggies for roasting…

And added them into the oven with the meatloaf during the last half hour of baking.

An hour later, this is what you get… amazing perfectly portioned mini bacon meatloaf balls!

The best part about making these meatloaf balls is that they keep amazingly well in the refrigerator and taste even better the next day! Another fun way to adapt this into an appetizer for parties is to make them into bite-sized meatballs and serve with a toothpick… mini bacon meatloaf appetizer balls, how cute right!

Mini Bacon Meatloaf Balls (adapted from Paula Deen)
makes 12 balls if using a cupcake pan
meatloaf:
- 1 pound ground beef
- 1 1/4 teaspoons of salt
- 1/4 teaspoon ground pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 8 ounces canned diced tomatoes with juice
- 1/2 cup quick-cooking oats
- bacon
topping:
- 2/3 cup ketchup
- 4 tablespoons brown sugar
- 2 tablespoons prepared mustard
Directions:
- Preheat oven to 375°.
- Mix all meatloaf ingredients well.
- Brush a cupcake pan with oil. Scoop meatloaf into the cupcake pan.
- Cover each meatloaf ball with bacon. Feel free to cut the bacon slices.
- Mix ingredients for topping and spread onto each meatloaf ball.
- Bake in the oven for 1 hour.

I am a girl. I don’t watch the Superbowl. I can’t stand watching sports, but when I do expect comments like “Ooh his butt looks big,” and “His pants are so tight, how does he move?”. I associate teams with their celebrity girlfriends…thank goodness Kim Kardashian isn’t dating anyone in the NFL anymore! Yes, I am that type of girl.
Can you guess what I love about Superbowl Sunday (besides the food, of course!)? It’s not the commercials or the half-time show, but it’s the endless choices of amazing parking spots and zero traffic (rare for LA) because everyone is at home or at the bar watching the big game. January 27th is National Chocolate Cake Day. Plus, it’s Friday! Therefore, I think that it’s very appropriate and fitting to have a slice of a chocolate cake today! Perfect excuse and no regrets.
For me, chocolate cake is definitely an indulgence. After I have a slice (and a half leaning towards two), my skinny jeans and I are no longer BFFs but eventually we do rekindle our love for one another :)

Oh, what a week this has been! Deadlines, research, lots of work, and being sick…it was quite a busy week for me. But on a more happier note…after almost a week apart, my boyfriend is back! With that said, lots of hugs and presents were in order :)
The highlight of my week was yesterday. Thursday just felt perfect. I got the majority of my work done and beat my deadlines way in advance and am feeling 100% better! And it didn’t hurt that I got to spend that day with a certain someone.

we had sushi! and shared a light beer...half the calories and even less calories because it's "light" lol. it was kind of him to drink a beer out of his norm, yes he laughed at me for wanting light :)

Surviving the College Dining Hall [INFOGRAPHIC] | Foodbeast.
Thankfully, I never succumbed to the harrowing “Freshman 15″ during my freshmen year at the dorms. Actually, I lost weight and my tummy was at its flattest and fittest point ever. I must admit, it’s possible and tempting to overeat because of all the different food choices available. I mean where else, besides the mall, can you find Chinese, Mexican, Italian, pizza, hamburgers, and tater tots served in one place?
My favorite time of the day to actually eat at the dining halls was breakfast. Why? Because at my college, they served all my favorite breakfast foods…eggs, tater tots, bacon AND there was a make-your-own waffle station! I loved it!
So how did I survive the “Freshman 15″? Well, I myself am a very light eater especially when it comes to non-homemade foods. But when it’s my dad’s cooking, you bet I’ll have seconds and thirds! In public places, I eat like a bird. This eating like a bird habit actually developed during my freshmen year. If you’ve seen dining hall food, then you know that it’s not that you go home and rave to mom about… So I would just pick and choose a little bit of everything and eat little bites of it, just enough to get me full and not starve. I always loaded up on salads (because veggies were always cooked in tons of oil), fresh fruit, the occasional cookie or two, and lots of bacon/eggs/tater tots for breakfast :)
During my freshmen year, I was an occasional vegetarian. I avoid eating meats, just because those were the most bland dishes being offered. I also purchased the cheapest meal plan offered because on the weekends I was always gone. Trust me, you would too if you went to college in the desert… Since I was living at the dorms, it was very convenient for me to take advantage of the recreational activities. My college had a wonderful recreational center!
So my advice is to be watchful of what you’re eating, load up on anything fresh like veggies and fruit, and do not deprive yourself of the treats but don’t over do it! And do take advantage of your school’s recreational activities!
