UPDATE: lunch time!!

Remember Monday’s lunch? Roasting veggies and adding it to the ginger scallion noodles makes a great lunch that’s very light, refreshing, and healthy.

Growing up, my mom would always boil our veggies which of course, were very bland and unappetizing which resulted in me never wanting to eat veggies (she still does it btw). Since I started cooking (almost a year ago now), I found how amazing veggies can taste when their roasted in the oven… I haven’t tried roasting too many veggies (that’s the noob in me :), but some of my favorite vegetables to roast are carrots, asparagus, potatoes, and broccoli.

Now that it’s Autumn, I find myself wanting to peruse the grocery aisles in search for the perfect seasonal veggies for roasting.  I’ve been wanting to make oven roasted sweet potatoes! Any recommendations for me as to which veggies are perfect for oven roasting? I would love to venture out of my norm and try new things!

Below is my recipe on my how I like to roast my broccoli and here is the recipe for ginger scallion noodles (since I talk about it so much)…

Oven Roasted Broccoli

  • broccoli florets
  • olive oil
  • dried oregano
  • salt/pepper
Directions:
  1. Preheat oven to 400°.
  2. Rinse broccoli, and pat dry.
  3. In a bowl, drizzle broccoli with olive oil. Season with dried oregano, salt/pepper to taste. Toss well.
  4. Place broccoli on sheet pan (don’t overcrowd it, make a single layer).
  5. Bake for 15 minutes.
  6. Serve.
NOTE: for carrots, I will usually bake them for 20 minutes.
How do you bake your veggies? Do you like to incorporate other herbs and spices like pepper flakes or do you sprinkle them with cheese? I would love to know how you eat them! I am so weird like that… :)

surprise! happy anniversary!! :)

After a fun and successful afternoon today, we decided to go out to lunch to celebrate (for this said fun and successful day).

Get ready for a “oh, that’s so Kat” cute story moment. Haha if you rather not, skip down for deeeeelicious foodie pics :)

We went to CPK, and the waitress sat us down and asked us why we came here and if we were celebrating something. I shouted “Our anniversary!” Hahah, she said congratulations! The look on my boyfriend’s face was priceless, he seemed puzzled and replied with a “Really, I didn’t know…” and we all laughed. Hahah, all in good fun! That made me wonder, ladies do your boyfriends know when your anniversary date is? And isn’t it hilarious when you surprise them and they totally forgot that it’s anniversary day? I find it amusing, but I don’t get upset because let’s be honest I forget sometimes too.

(FYI: Technically, it really wasn’t our anniversary…it’s actually another day that’s very close to today :)

Hmm…ok, enough with my nonsense babbling and stories that never make sense…but hey, that’s me…I am a terrible storyteller!

CPK is one of our favorite places to go to just eat, relax, laugh, and just enjoy each other’s company. And it doesn’t hurt that there is a cupcakery across the street :)

Here’s what we ordered….(oh, as usual he ordered strawberry lemonade and she stuck with water+lemon hehe)

spicy chicken tinga quesadilla || delicious when eaten hot! has a lot of southwestern flavors, ok..not too fond of beans.

bbq chicken chopped salad || this is his favorite! this salad is also the worst salad ever to order at CPK. I couldn't help but take a bite, sooo good ugh...

sedona tortilla soup || i ordered soup. it. was. amazing. enough said. big bowl. I was full halfway, but couldn't stop...now I have belly bloat :)

Hope everyone’s week is going well! I just discovered a new show on Netflix that I am very excited to start watching, but I am trying not to get too excited where I end up watching more episodes than my boyfriend. Knowing me, I’d probably blab and end up ruining it for him lol. Do you get the hint that my life is simply beyond boring??

Anyhoo, he has suggested that we cook together for date night, any recipe suggestions for date night??? :)

reduce, reuse, recycle : plastic baggies

plastic baggy wipes :)

Oh my gosh, I found such a cute kitchen project for you to try! It’s very simple, practically costs nothing because most likely you have tons of these lying around all over the place, and it’s just too cute to pass up! :)

I finally joined Pinterest earlier this week and I got so excited that I started pinning everything I saw on everyone’s boards hehe. Well, the “how to roll plastic bags so they come out like wipes” caught my eye from tatertots & jello. I instantly fell in love with this idea! In fact, I ransacked my whole house looking for those plastic baggies. Next up, my boyfriend’s house :)

The instructions are easy to follow, but here are some of my tips:

  • As your rolling, add one bag at a time rather than lining them all up in one really long line because that way you don’t have to worry about air getting into the bags
  • Try using Target baggies, those are the cutest :)
  • If you have a large variety of random bags and not enough Target baggies, use those first and save the Target baggies for last
  • If you don’t have any empty wipe containers, simply wrap a rubber band around it (works just fine this way) and put in a decorative cup large enough to hold your bags (optional), I used one of my ceramic cups I made :)
