Candy shortage, oh no!!!

Oh no, my Target is having a Halloween candy shortage!!! Hurry up and snatch a few of the orange Halloween Kit-Kats for me please and ship them my way because they are my favorite! :)

If you love the hard to find white chocolate Kit-Kats then you’re going to love the orange ones. They have that yummy creamy white chocolate taste but they’re just dyed orange.

So happy I found a bag! :)

The farmers market!

I love running into them unexpectedly. Every time I’m in one, all I think about is all the amazing yummy things I can cook with all the fresh organic veggies and eating kettle corn! I’m sure by now my boyfriend is use to hearing me go on and on about it lol.

Couldn’t find the kettle corn but we did find the taco stand!! Yummmm :)

it’s the 100th post!! what better way to celebrate than with a Liebster Blog Award!

Ahhh finally, the 100th post! Wow, I couldn’t have gotten here without all of you! Since it is the big 100, I guess by default this post needs to be extra special right? :)

Well two Fridays ago, I mentioned that I was awarded with the Liebster Blog Award. The beautiful lady behind Around the World in Eighty Bakes nominated me for the award. What made it even more sweet was that I received the nom on National Chocolate Cupcake Day. I was on cloud nine that day, I felt like Tuesday was made for me. I was that excited…everything just fell right into place.

Sure, it probably doesn’t mean much to some but for a girl that’s only been blogging for almost 5 months now…it means the world to me.  When I started blogging I never even dreamed of things like this happening for me or my blog.

I feel like this is the only appropriate time in my life where I am allowed to give a cheesy thank you speech, so please bear with me because I’m going to me the biggest cheeseball there is right now! Hahah. It’ll only be for a second, I promise :)

To the “he” in she cooks, he eats thank you for all your encouragement and support not only with the blog but with everything that I do. I can’t imagine being with anyone else other than you, here’s to the next 100 years and the many anniversaries and date nights to come! I love you. Oh ps. thanks for the kitchen! :)

And to those few readers that I know on a first name basis…your comments, advice, and emails make me happy. Just happy. I can’t explain it. Trish and aikidude (has the ban been lifted? lol), thank you for being there since the beginning.

Chopped Caprese Salad

Being such a smartie pants, I thought that pairing a light salad with a roasted pork tenderloin would counteract the heaviness that is meat and prevent me from falling into a massive meat-induced coma. Oh boy, was I wrong! As usual, I plopped myself onto my boyfriend and fell right asleep :)

This has to be the simplest and yummiest salad  I’ve ever made! I really can’t call this a recipe because well… it’s so easy! Here are the suggested instructions and it can be made in any order your heart desires….

INGREDIENTS: tomatoes, mozzarella cheese, fresh basil leaves, olive oil, balsamic vinegar, s+p

Finally Friday!!! I could not be more happier. I feel like I’ve been so M.I.A. on here, I was on such a great blogging streak too…le sigh I guess that’s what happens when you have such a crazy busy week going on.

Thank goodness it’s the weekend! I feel like I’m coming down with something, so all I want to do is sleep in, relax, and catch up on all my cheesy guilty pleasure shows that I’m too embarrassed to admit I watch. That’s my Halloween weekend! How about yours? What are you planning to be?! I plan on being “single”! Hehe, borrowed from Megan Amram (she is the one of the funniest human beings on Earth!).

Balsamic-Garlic Crusted Roasted Pork Tenderloin

The roasted pork tenderloin that I’ve been talking about for ages  is finally here. Ahhh, I can’t even contain my excitement! Oh my goodness, it feels like I haven’t done a recipe post in so long!

I found this recipe on Kitchen Confidante via Pinterest last weekend and just had to make it for date night. In my opinion, this is the perfect recipe for someone like me that hardly cooks any meat because it’s very simple, the ingredients are basic and accessible, and most importantly…it’s foolproof! You really can’t mess this up, especially if you have a trusty meat thermometer at hand.

Although the meat was perfect in every way, I should of made a gravy… Prior to this, I don’t recall ever having pork tenderloin so I was a bit skeptical when my boyfriend suggested we make a gravy. My words were “really?? gravy…who does that?”, and now I feel like a complete idiot and have to listen to him say “I told you so” (ughh why do those words sound so much better when they’re coming from me? :). Eating a slab of meat without any kind of sauce can start to taste kind of bland halfway through the dinner, you know what I mean? Haha.

Anyways, if you have a love affair with garlic and balsamic vinegar then this must be on your list of must-trys!

INGREDIENTS: pork tenderloin, garlic, olive oil, balsamic vinegar, s+p

STEP 1: you will need 4-5 garlic cloves (more if you love garlic like me)

finely mince the garlic

STEP 2: in a bowl, combine garlic, balsamic vinegar, olive oil, s+p, and stir; it will turn into a paste-like mixture

STEP 3: unwrap the pork tenderloin

KITCHEN TIP: Puncture a few holes into the raw pork tenderloin so that the flavors of the marinade can meld into the meat (courtesy of boyfriend :)

STEP 4: rub the paste all over the pork (can be marinated overnight)
