Welcome to another he cooks, she eats edition!

He was so sweet to take over cooking duties for date night since I was stuck in my indecisive phase. I hate to brag, but he is quite the cook himself and makes the best mexican food I’ve ever eaten, and a mean steak! I consider myself to be one lucky girl! By the way, what is it with guys and their amazing steak cooking skills? I myself, refuse to cook a steak just because I rarely eat red meat and I’m terrified of messing it up!

For dinner, he did a healthy spin on the classic arroz con pollo. The chicken is baked in the oven and takes very little prep time and less than an hour to bake. It was simply delicious…the skin was crispy, and the meat was moist and so flavorful! The rice…let’s see, the rice is my absolute favorite!! It’s spicy! If you love spice then you’ll love it! If spice is not your cup of tea, then you can omit the spicy tomato sauce, but then again it really wouldn’t be mexican rice without the spice! This is one of my favorite dishes that he makes. In fact, I ate a giant bowl of his leftover rice the following day and took a two hour nap afterwards. Yes, it was that good.

Arroz con Pollo

serving size: one happy couple :)

Mexican Rice

  • 1 tablespoon butter
  • 1 cup rice
  • 1/4 cup of spicy tomato sauce (used El Pato, or if not available use enchilada sauce)
  • 1 1/2 cups of water
  • half an onion, diced
  • 2 garlic cloves, minced
  • oregano
  • salt/pepper
Directions:
  1. In a pot, melt butter with rice and brown.
  2. Add garlic and onions, and season with salt/pepper, and oregano to your desired taste. Stir well.
  3. Add water and spicy tomato sauce. Bring to a boil, stirring occasionally for 1-2 minutes.
  4. Cover, reduce to simmer. Leave a slight gap between the pot and lid. Let it simmer for 10 minutes. Make sure to check occasionally and stir so that the rice does not stick to the bottom of the pot.
  5. After 10 minutes, the liquids should have evaporated. If there is a lot of liquids, leave for another 5 minutes. The rice should be moist. Take off the stove and cover with lid . When ready, serve.
Oven Baked Chicken
  • 2 chicken thighs
  • olive oil
  • salt/pepper
Directions:
  1. Preheat oven to 400°.
  2. Clean chicken thighs, and pat dry.
  3. Lay chicken on a baking dish and drizzle the chicken with olive oil.
  4. Season both sides with salt/pepper.
  5. Bake the chicken for 35 minutes.
  6. After 35 minutes, take the chicken out of the oven to check if it is done. If clear juices are running, then put it back in the oven for another 10 minutes.
  7. Serve.

A 100°+ day means I can stay in bed, treat myself to a slew of cheesy movies on Netflix (any corny movie suggestions for me?), catch up on blog reading for DIY date night ideas (I plan on making more ginger scallion noodles next week, I hope my boyfriend doesn’t get sick of it! :), and indulge in some yummy ice cream (already experiencing some ice cream belly pains lol)!

I heart TJs

Who doesn’t love Trader Joe’s?! After a terrible shopping experience at my local Albertsons, I vow to stay away from that place.

Why was it so terrible, you ask? It’s almost too traumatic of an experience to tell you! Let’s just say I needed a bottle of grape seed oil and sherry vinegar to make ginger scallion noodles and made the mistake of going into Albertsons. Albertsons lacks variety! There was only one brand of grape seed oil and one brand of sherry vinegar that was available. And then there was the cashier that was helping us…. I won’t say exactly what happened and I don’t want to be openly rude, but let’s just it was one of those terrible shopping experiences that just lingered. I wanted to leave everything, tell her “forget it”, not pay, walk out, and drive to Trader Joe’s. It was that annoying…

Trader Joe’s is amazing! I love that place! My TJ has always been wonderful to me. They help bring my groceries to my car even if it’s only a bag or two. They are so peppy, extremely helpful, food is fresh, and have a variety of products. Sure, it may be a tad pricey, but it’s well worth it for the quality of products you are paying for.

I went there a few weeks ago to get a bottle of oregano and came out with more stuff than I needed! No regrets though, not one whatsoever!

UPDATE: criminy! someone stole my cookie sheet!!!!

Awhile ago, I informed the whole blogging world that my beloved cookie sheet was stolen from me. It was a sad day. Not just because my cookie sheet was stolen, but because I had cookie cravings and no cookie sheet to bake them on! Sure I thought of alternatives, but none seem all that great. And I could have just gone out to buy a new one, but I was lazy and didn’t want to make a trip to Williams-Sonoma.

Well, not only can this girl cook but she also has amazing ideas!! Hahah, not really…but when you’re desperate enough for cookies, you’ll do just about anything! I used my glass baking dish, sprayed it with some non-stick cooking spray and lined it with some parchment paper, and voila COOKIES!! It took twice as long, but turned out just fine!

And now, an open letter to the culprit(s):

Dear Cookie Sheet Stealers,

You may have stolen by beloved cookie sheet, but I can still bake cookies without it! Hope you enjoy using a nasty old one you cheapos while I get a shiny new one + matching silpat! :)

Momofuku’s Ginger Scallion Noodles

Remember yesterday’s post? I know I do…I couldn’t keep my mind off Momofuku and those ginger scallion noodles! After a quickie Google search (did you know there’s a recipe button on the side bar now? :) on ginger scallion noodles, I found so many recipes and tons of rave reviews for the ginger scallion sauce. I knew I just had to make it! It’s one of those love-at-first-sight-if-I-don’t-eat-this-I-will-not-eat-anything-else recipes, plus I had pretty bad noodle cravings that day. So I hopped into my car, and drove my butt to the nearest Asian market just to buy ramen noodles so that everything would turn out perfect.

Unless you are immune to onions or own a pair of onion goggles, this recipe is a breeze! If you are like me, take mini breaks while chopping the scallions. I took 15 minute breaks and indulge in a gigantic bag of Funyuns. Yes, she chopped her own onions for once and it impressed him :)

According to David Chang (the mastermind behind Momofuku), you can add anything else to your liking. Next time (oh, there will be many!!), I want to add pan seared salmon/scallops, grilled chicken, or oven roasted shrimp to the noodles. Already drooling just thinking about it! If you love the taste of fresh ginger, then you are going to love these noodles!

Here’s what you’ll need to make your very own bowl of yummy ginger scallion noodles…

INGREDIENTS: ramen noodles, ginger, scallions, sherry vinegar, soy sauce, grape seed oil, and salt

Make the ginger scallion sauce ahead of time…

STEP 1: finely dice the scallions and ginger

STEP 2: put the ginger and scallions in a bowl and add sherry vinegar, soy sauce, grape seed oil, and salt

STEP 3: mix well and set aside for 15-20 minutes prior to serving
